Remarkable Poached Pears

  • Heat water to 175 °F degrees
  • While water is heating, mix 1 bottle of red wine, 2/3 cup sugar, 2 cinnamon sticks, the zest of 1/2 orange, 1 star anise, 1 vanilla bean cut in half, and 1/2 tsp. nutmeg in a sauce pan.  Bring to a boil on the stove and simmer until mixture is reduced by about 2/3
  • Peel 3 to 4 pears
  • Place pears in bag and cover with the reduced wine sauce. Seal according to Savour directions
  • Let’s face it, sous vide fruits and vegetables need help sinking. Putting a metal spoon in the bag often does the trick
  • Sous vide for 1 hour
  • Remove pears from bag and set aside. Return sauce to pan and simmer until it thickens slightly and coats the back of a spoon
  • Pour sauce over pears and serve with vanilla ice cream
